Mashed Potatoes

I'm sure we all have made these. Once again the trick here is BUTTER! We add a secret weapon to ours as well.


Here is what you will need:

10lbs Red potatoes (it depends on how many you are having)
BUTTER
Milk or Cream
Salt and Pepper
Horseradish

OK so you know you peel the potatoes and then you can cut them into quarters and throw them in a pot with salted water and let them boil till they are tender. Then drain off all of the water. Mash them down with a potato masher or spoon whatever you have that will work. Then get your mixer and start mixing them while gradually adding milk or cream and butter. I use almost a whole pound of butter for 10 lbs of potatoes. We also throw in 2 tablespoons of horseradish ( in a jar in the dairy section at the store) Mix them till they are smooth and watch the milk! You don’t want them to be too runny! Add salt an pepper as needed. Just keep tasting them.

You can do these the day before like I said. Just put them in a casserole dish that has been sprayed or buttered. Then when you put the stuffing in the oven put the potatoes in at the same time, but uncovered!
